vegan garlic chicken pasta

serves 2-4

INGREDIENTS:

↠ 12oz vegan chicken tenders
↠ 3 cloves of garlic
↠ 1 tbls oregano
↠ 1 ½ vegetable broth
↠ 1 tbls vegetable oil
↠ 2 tbls olive oil
↠ 1 box of whole grain spaghetti
↠ salt and pepper to taste
DIRECTIONS:

heat oil in medium pan on medium heat. add chicken tenders and cook until golden brown. reduce heat to low and add garlic, oregano, and broth. turn heat back up to medium and add water and scrape up all the flavored bits on the bottom of the pan. salt and pepper to taste. simmer for a few minutes until the sauce has reduced. turn off and cover with lid. cook pasta according to directions. don’t forget to salt the water! add pasta to chicken mixture and mix until incorporated. enjoy!

INGREDIENTS:

↠ 2 frozen bananas, peeled and sliced

↠ 3 tbls raw unshelled hemp hearts

↠ 2 cups almond milk (or your favorite milk substitute!)

INSTRUCTIONS:

add all ingredients to blender and blend until smooth. enjoy!
