vegan garlic and onion marinara with whole grain pasta
serves 2-4
INGREDIENTS:
↟ 1 8oz can of tomato sauce
↟ 2 8oz cans of tomato paste
↟ 2 14.5oz cans of petite diced tomatoes
↟ 1 medium onion, finely chopped
↟ 2 cloves of garlic
↟ 1 tsp red pepper flakes
↟ 2 tbls olive oil
↟ 2 tbls vegetable oil
↟ 1 tsp sugar
↟ 1 box whole grain spaghetti
↟ salt and pepper to taste
INSTRUCTIONS:
add oil and diced onion to medium pan and sauté on low until onion is caramelized. turn heat up to low-medium and add garlic, red pepper flakes, and tomato paste to the pan. stir until everything is incorporated. add tomato sauce and diced tomatoes and stir. simmer on low for 15 minutes. add sugars and salt and pepper to taste. turn off heat and cover with a lid. cook pasta according to directions. don’t forget to salt the water! drain the pasta and serve with marinara. enjoy!
